Job Summary
The Garde Manger Chef is responsible for all cold food preparation and presentation, ensuring creative, visually appealing, and hygienically prepared cold dishes that meet the highest standards.
Key Responsibilities
- Prepare and present salads, cold appetizers, dressings, sauces, cheeses, terrines, and buffet displays.
- Ensure portion control and minimize food wastage.
- Maintain proper food storage, labeling, and rotation in compliance with HACCP standards.
- Collaborate with chefs to develop seasonal cold menu items.
- Support events/banqueting with cold food and buffet setups.
- Supervise and train junior staff in the cold kitchen.
- Maintain kitchen equipment and ensure compliance with safety regulations.
Requirements
- Diploma in Culinary Arts or Food Production.
- At least 2–3 years’ experience in a similar role within a reputable hospitality establishment.
- Knowledge of HACCP and hygiene standards.
- Strong creativity and presentation skills.
- Experience in banqueting and cold buffet setups.
- Ability to supervise and train staff effectively.
