We are seeking a passionate and talented Chef De Cuisine – Indian Cuisine to lead the kitchen in our all-day dining restaurant. As a key leader in our Culinary team, you will bring authenticity, creativity, and expertise in Indian cuisine, ensuring an exceptional dining experience for our guests. You will be responsible for menu development, kitchen operations, and maintaining the highest standards of food quality, hygiene, and presentation.

The Perfect Candidate

You are a highly skilled and experienced Indian cuisine specialist with a deep understanding of traditional and contemporary Indian flavors, spices, and cooking techniques. You thrive in a fast-paced, luxury hospitality environment, demonstrating strong leadership and organizational skills. With a proven track record of designing innovative, high-quality menu items from scratch, you bring both creativity and consistency to the kitchen. You are a natural mentor, fostering a culture of teamwork, excellence, and continuous learning among your team members.

Responsibilities

  • Oversee the entire all-day dining restaurant kitchen operation, ensuring seamless execution of service.
  • Develop and curate authentic Indian menus with a focus on innovation, seasonality, and guest preferences.
  • Ensure consistency in flavor, quality, and presentation of all Indian dishes.
  • Lead and train a team of chefs and kitchen staff, maintaining high standards of efficiency and professionalism.
  • Manage kitchen inventory, food costs, and supplier relations to ensure operational efficiency.
  • Maintain the highest levels of hygiene, safety, and compliance with HACCP standards.
  • Collaborate with the Executive Chef and F&B team to drive guest satisfaction and revenue growth.
  • Minimum 2 years of experience in a similar role within a large luxury hotel operation.
  • Proven expertise in Indian cuisine, with the ability to create unique and memorable dining experiences.
  • Strong knowledge of traditional and modern Indian cooking techniques, spices, and regional specialties.
  • Experience in menu engineering, cost control, and kitchen management.
  • Previous experience with Hyatt Hotels Corporation is preferred.
  • Excellent leadership, training, and communication skills.
  • Ability to work in a high-pressure environment while maintaining attention to detail and quality.
