Job Purpose
The Junior Sous Chef supports the Sous Chef and Executive Chef in the day-to-day kitchen operations, ensuring food is prepared and presented to the required standards of quality, hygiene, and consistency. The role involves supervising kitchen staff, assisting in menu execution, and maintaining a safe and efficient kitchen environment.

Key Duties And Responsibilities
- Assist the Sous Chef in overseeing daily kitchen operations and food preparation.
- Supervise and guide commis chefs and kitchen assistants during assigned shifts.
- Ensure all food is prepared and presented according to established recipes and standards.
- Monitor food quality, portion control, and presentation at all times.
- Enforce strict adherence to food safety, hygiene, and sanitation standards (HACCP).
- Assist in stock control, inventory management, and minimising food wastage.
- Step in for the Sous Chef when required and ensure smooth kitchen operations.
- Support training and development of junior kitchen staff.
- Ensure proper use and care of kitchen equipment and report any faults promptly.
- Maintain a clean, organised, and safe working environment at all times.
- Qualifications And Experience
- Diploma or Certificate in Culinary Arts or related field.
- Minimum of 2–3 years’ experience in a professional kitchen, preferably in a hotel or high-volume restaurant.
- Previous experience in a supervisory or senior line cook role is an added advantage.
SKILLS AND COMPETENCIES
- Strong culinary and food preparation skills.
- Good leadership and team-supervision abilities.
- Knowledge of food safety, hygiene, and kitchen best practices.
- Ability to work under pressure in a fast-paced environment.
- Good communication and time-management skills.
- Flexibility to work shifts, weekends, and public holidays.
