Job Purpose

The Junior Sous Chef supports the Sous Chef and Executive Chef in the day-to-day kitchen operations, ensuring food is prepared and presented to the required standards of quality, hygiene, and consistency. The role involves supervising kitchen staff, assisting in menu execution, and maintaining a safe and efficient kitchen environment.

  • Assist the Sous Chef in overseeing daily kitchen operations and food preparation.
  • Supervise and guide commis chefs and kitchen assistants during assigned shifts.
  • Ensure all food is prepared and presented according to established recipes and standards.
  • Monitor food quality, portion control, and presentation at all times.
  • Enforce strict adherence to food safety, hygiene, and sanitation standards (HACCP).
  • Assist in stock control, inventory management, and minimising food wastage.
  • Step in for the Sous Chef when required and ensure smooth kitchen operations.
  • Support training and development of junior kitchen staff.
  • Ensure proper use and care of kitchen equipment and report any faults promptly.
  • Maintain a clean, organised, and safe working environment at all times.
  • Qualifications And Experience
  • Diploma or Certificate in Culinary Arts or related field.
  • Minimum of 2–3 years’ experience in a professional kitchen, preferably in a hotel or high-volume restaurant.
  • Previous experience in a supervisory or senior line cook role is an added advantage.

SKILLS AND COMPETENCIES

  • Strong culinary and food preparation skills.
  • Good leadership and team-supervision abilities.
  • Knowledge of food safety, hygiene, and kitchen best practices.
  • Ability to work under pressure in a fast-paced environment.
  • Good communication and time-management skills.
  • Flexibility to work shifts, weekends, and public holidays.
