The Role

This is a full-time, on-site role for a Sous Chef at Peponi’s located in Nairobi. You’ll be the Head Chef’s right hand – leading the kitchen in their absence, maintaining standards, and keeping service running smoothly. You’ll also take ownership of kitchen ordering and stock management, and play a key role in training, prep, and menu development as we grow.

We want someone who takes pride in consistency and quality, leads by example, and stays calm when the heat is on. Someone who represents integrity through and through and communicates with clarity with both the kitchen team and management.

Responsibilities

  • Support the Head Chef in running day-to-day kitchen operations
  • Lead the kitchen during service and in the Head Chef’s absence
  • Maintain quality and consistency across every dish that leaves the pass
  • Oversee prep work and ensure the team is set up for smooth service
  • Train, mentor, and supervise kitchen staff
  • Monitor food costs, portion control, and minimize waste
  • Manage kitchen ordering – track stock levels, place orders on time, and maintain supplier relationships
  • Ensure compliance with food safety and hygiene standards
  • Coordinate with front of house to keep service seamless
  • Assist with menu development, testing, and seasonal updates
  • Keep management informed of kitchen issues, stock needs, and team performance

Qualifications

  • Proven experience as a Sous Chef or strong senior CDP ready to step up
  • Solid understanding of Neapolitan pizza or willingness to master it
  • Strong leadership skills – you earn respect and bring out the best in your team
  • Calm and organized under pressure during busy service
  • Commitment to food safety, hygiene, and cleanliness
  • Good understanding of kitchen costs, waste management, and portion control
  • Experience with stock management and ordering – you stay ahead of what’s needed
  • Strong communication skills with kitchen and front of house
  • Integrity and accountability – you own your section and your mistakes
  • Flexibility to work evenings, weekends, and holidays as required
  • A genuine passion for food and hospitality
