  • We are looking for a Bar Manager to lead and elevate the bar experience at Peponi’s in Nairobi. This role offers flexibility — full-time, part-time, or hybrid arrangements may be considered depending on the candidate’s experience and operational fit.
  • You will oversee bar operations, drive beverage quality and profitability, and cultivate a vibrant, welcoming atmosphere that reflects Peponi’s energy. The bar is a central pillar of our guest experience, and this role requires someone who understands both hospitality and commercial performance.
  • We’re looking for a leader who is hands-on when needed, strategic about costs and margins, and passionate about building a strong bar team and drink program.

Responsibilities

  • Oversee and optimize day-to-day bar operations
  • Lead, train, and mentor bartenders and bar support staff
  • Maintain high standards of drink quality, consistency, and presentation
  • Develop and refine cocktail menus aligned with Peponi’s brand and seasonality
  • Manage bar inventory, ordering, and supplier relationships
  • Monitor beverage costs, GP margins, and implement strong portion control systems
  • Reduce waste and control spillage through structured procedures
  • Ensure compliance with alcohol licensing, hygiene, and safety standards
  • Coordinate with front of house and kitchen to ensure seamless service flow
  • Drive bar revenue through upselling, promotions, and creative beverage programming
  • Handle guest feedback and maintain a high standard of hospitality
  • Report on bar performance, stock levels, and staffing needs to management

Qualifications

  • Proven experience as a Bar Manager or Senior Bartender in a high-volume hospitality environment
  • Strong knowledge of cocktails, spirits, wine, and beer
  • Demonstrated experience in inventory management and supplier coordination
  • Solid understanding of beverage cost control, stock variance, and profitability
  • Leadership capability — you build team culture and accountability
  • Ability to remain calm and decisive during busy service
  • Strong communication and interpersonal skills
  • Commitment to cleanliness, compliance, and operational standards
  • Integrity and ownership mindset
  • Flexibility in scheduling depending on operational needs
