Job Responsibilities:

The Dietitian / Menu Planner is responsible for designing and implementing cycle menus that meet nutritional standards, promote healthy eating, and ensure a variety of appetizing and high-quality meals are provided. Key responsibilities include, but are not limited to:

  • Planning and developing a 21-day cycle menu using the Food Service Management (FSM) system or equivalent.
  • Ensuring all menus comply with DoD food service directives and meet nutritional standards required by the U.S. Navy.
  • Promoting healthy food choices and balanced meal options in menu planning, ensuring meals appeal to a diverse customer base.
  • Monitoring and reviewing menu offerings regularly to ensure variety, nutritional value, and alignment with customer preferences.
  • Preparing and certifying menus in collaboration with the U.S. Navy to ensure compliance with all applicable regulations and standards.
  • Analyzing menu items for nutritional value and incorporating dietary best practices to promote health and wellness.
  • Providing guidance to food service staff on proper meal preparation, portioning, and nutritional goals.
  • Documenting and maintaining records related to menu planning, meal standards compliance, and certification processes.
  • Reviewing vendor products, identifying sourcing opportunities, and ensuring quality ingredients that support dietary goals.
  • Addressing feedback from customers and stakeholders to continuously improve menu offerings and food service operations.

Minimum Requirements:

  • Bachelor’s degree in dietetics, nutrition, food service management, or a related field.
  • At least 2-4 years of experience in menu planning, nutritional analysis, or dietetics in a commercial, military, or institutional food service environment.
  • Proficiency in menu planning software such as Food Service Management (FSM) or equivalent systems.
  • Strong understanding of nutritional standards and meal composition in accordance with DoD or similar food service regulations.
  • Excellent organizational skills with the ability to manage complex menu planning and documentation processes.
  • Ability to successfully pass contract medical requirements and maintain compliance for the duration of deployment.
  • Must be able to obtain and maintain facility credentials/authorization.

Preferred Qualifications

  • Prior experience in an austere OCONUS (Outside the Continental United States) environment with a multi-national workforce.
  • Valid country driver’s license.
  • Country visa (as required in line with the U.S. Department of State Foreign Clearance Guide).
  • Certification as a Registered Dietitian (RD) or equivalent.
  • Proven experience in food service operations for military or government dining facilities.
  • Familiarity with U.S. Navy or DoD food service directives, nutritional standards, and meal preparation requirements.
  • Demonstrated ability to train and guide food service staff on healthy meal preparation and dietary compliance standards.
